Southwestern Veggie Wraps


Need a quick healthy meal? I love these veggie wraps, and so does my hubby. That's a plus! And don't tell him they're called veggie wraps - that might turn him off. He's not a big veggie eater. I usually tell him we are having black bean wraps.


Here's how I make them ( I adapted another recipe):

1 bag Bird's Eye frozen pepper stir fry
1 1/2 cups frozen corn or a can of kernel corn
1 can 15 oz black beans
onion
garlic powder
chili powder
salt
oregano
cumin
1 tbsp. olive oil
whole wheat tortillas

Saute pepper stir fry mix in oil. Stir in beans, corn, 2/3 cup water, and spices. Bring to a boil. Reduce heat, simmer,  uncovered for 10-15 min. until liquid is evaporated.


Spoon about 2/3 cups down center of tortilla. Top with shredded cheese, sour cream, and salsa! Roll and enjoy!
