Cookies for breakfast

It's back to school here for the kids in my town this week, and I'm sure it is or will be soon for many of you. That means you may have a little less time for getting healthy breakfasts, so here are seven healthy breakfast cookies recipes that you can make ahead. And it should certainly appeal to the kids- who wouldn't want cookies for breakfast? You don't have to tell them they are healthy. Healthy eggless breakfast cookies

Yep, you read that correctly- eggless. I'll go ahead and admit I discovered this concept purely by mistake. I tried out this recipe shared by Love, Pomegranate House. And it's awesome. Even without the eggs. Let me explain. I don't normally get all the ingredients out ahead of time. I get them out and mix, etc as I go through the steps. So.... I mistakenly skipped step #2 of the recipe and totally missed the eggs and water. I was patting out the last cookie when it struck me as odd that I didn't use any eggs. Oh well, too late. I baked them anyway. Then I got on Google and searched. Eggless cookies aren't that odd after all. All you need in a recipe  is something to hold it together. And the peanut butter does a great job by itself. So next time, I'll probably leave the eggs out on purpose. I will add the water for a little more moisture, but these really were not hard or dry. Rainbow cookies- Tried it out Thursday

For New Year's I tried out my in-laws' recipe for rainbow cookies. These are some of my hubby's favorite. This is his grandmother's recipe and his sister bakes them every year for Christmas. I decided to try them for New Year's since rainbows are associated with luck and we have other traditions for luck and prosperity in the New Year. Cookies ready to go in the oven. Baked and ready to eat. Here's the recipe (modified a little for better understanding) and as I made them. 1/2 cup shortening 1/2 cup butter 1 3/4 cups sugar 2 eggs 3 cups sifted self rising flour cocoa red and green food coloring red and green candied cherries We couldn't find red cherries so we used green in both parts. You can also add nuts. Mix the first 6 ingredients together. Divide dough into three equal parts. Add cocoa to the first part until you reach desired color. Quick and easy cookies

I have a compulsion to collect things or supplies for my interests to the extreme. I like to cook and have collected many, many recipes. I also now have a compulsion to "use it or loose it." I'm cleaning out closets, etc and getting rid of things I don't use. I've tackled the recipes too. If they are not hits, they will get thrown out. Sunday I tried this quick little recipe and it was a hit. Hubby likes these. Pebbles Cookie Crisps 1 pkg. (2 layer size) yellow cake mix 1/2 cup vegetable oil 1/4 cup water 1 large egg 3 cups Post Fruity Pebbles cereal Mix cake mix, oil, water and egg in large bowl with spoon until well blended. Stir in cereal. Drop tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets. Bake at 350 for 11 minutes or just until cookies begin to turn brown. Cool on wire racks. National Chocolate Chip Day

On a lighter note (from my previous post) today is National Chocolate Chip Day. Well... it's not a "National" Holiday as it has no Congressional proclamation but nonetheless, a chocolate chip is certainly worthy of celebrating. The vast majority of my well used recipes involve a chocolate chip- cookies, cakes, muffins. MMM.. and don't forget chocolate chip pancakes and trail mixes. Oh, and how about a handful of plain chocolate chips for snacking? (I've found evidence of my hubby doing this when he has a sweet craving.) How about celebrating chocolate chip day by sharing with a friend? Cookie mixes in a jar are always a nice gift. For this recipe (from craftbits.com) you will need a jar that holds around 1 quart or 1.130 litres. If your jar is airtight add the ingredients directly otherwise place them into an airtight or ziplock bag and attach the recipe card instructions.
