Healthy eggless breakfast cookies




Yep, you read that correctly- eggless. I'll go ahead and admit I discovered this concept purely by mistake.

I tried out this recipe shared by Love, Pomegranate House. And it's awesome. Even without the eggs.

Let me explain. I don't normally get all the ingredients out ahead of time. I get them out and mix, etc as I go through the steps. So.... I mistakenly skipped step #2 of the recipe and totally missed the eggs and water. I was patting out the last cookie when it struck me as odd that I didn't use any eggs. Oh well, too late. I baked them anyway.

Then I got on Google and searched. Eggless cookies aren't that odd after all. All you need in a recipe  is something to hold it together. And the peanut butter does a great job by itself. So next time, I'll probably leave the eggs out on purpose. I will add the water for a little more moisture, but these really were not hard or dry.

The hubby loved them. He ate two before supper the night I baked them, and two after supper. I tried to stress the fact that these are BREAKFAST cookies, but hey, if he likes them, he can eat them whenever he feels like it.


Give them a try, especially if you are looking for a healthy, portable snack or breakfast food.
