We're still trying sticking to a whole foods, grain free and mostly paleo diet. It seems to be helping the hubby with some pain and digestive issues. The one old food he keeps saying he wants is pizza. So... we had pizza. A yummy, healthy pizza with an almond flour crust and lots of veggies. And we had mozzerella cheese. To be truly paleo, you need to leave off the cheese.
I made my pizza based on this recipe from Everyday Paleo. (By the way, Sarah has some great cookbooks. We've been using some of the recipes from them.) I adapted the recipe to what I had.
Here are my crust ingredients:
1 cup almond meal (made from grinding my own almonds)
1 cup almond flour
2 eggs
3 tbsp olive oil
1/4 tsp baking soda
1 tsp garlic powder
dried rosemary
Here's my crust before adding toppings.
I followed Sarah's directions but used totally different toppings.
My version:
Ground chicken
chopped onions (cooked with the ground chicken)
tomato sauce
spinach
red bell pepper- chopped
tomato- chopped
green onion- chopped
I had so much stuff it ran off the edges of my crust, but it was still yummy! I'll be making this again.
